Squid ink Soup

Squid ink soup is black soup with the color coming from white squid’s ink. This soup is very popular and delicious with an aroma of the ocean and deep flavor. Squid ink soup has been valued highly for a long time as “kusuimun,” a medicine and nutrient.  The most common recipe for squid ink soup has pieces of white squid cooked in plenty of bonito soup stock with pork and nigana until the squid starts tearing apart.  The squid ink is then added last just before serving.
