Beni imo (Purple Sweet Potato)
Mainly two kinds of potatoes are cultivated and used for cooking in Okinawa. One is called ”bise” that has white skin and purple rouge flesh color. The quality is creamy and taste pleasant to the palate. Its cultivation is increasing because it is more nematode-resistant compared to “Miyano No. 36” that has red purple skin and the same fresh color as the other. However, its popularity among farmers is decreasing because of some problems in cultivation although it’s sweeter than “bise.”
